The hills of Minervino Murge, in the heart of Puglia, offer ideal conditions for olive cultivation. The unique terroir, characterized by calcareous soils, Mediterranean climate, and the alternation of sun and wind, gives our oil a distinctive and unmistakable character.

The Terroir

Our olive groves extend over mineral-rich calcareous soils, at an altitude ranging between 400 and 500 meters above sea level. This privileged position ensures excellent sun exposure and natural ventilation that protects the plants from diseases. The Mediterranean climate, with hot summers and mild winters, allows the olives to ripen slowly, developing a complex and balanced aromatic profile.

The Varieties

We mainly cultivate native Puglian varieties such as Coratina, known for its strong character and antioxidant properties, and Ogliarola, which brings sweetness and harmony to the blend. This combination of traditional cultivars, the result of centuries of natural selection, is the secret of our oil's unique organoleptic profile.

The Harvest

Harvesting takes place between October and November, when the olives reach the right degree of ripeness. We use traditional methods, harvesting by hand or with the help of mechanical aids that respect the integrity of the fruit. Timing is crucial: we harvest at the optimal moment to ensure maximum polyphenol content and the best balance between fruity, bitter, and spicy notes.

The Milling

The olives are milled within 6 hours of harvesting in our mill, to preserve all organoleptic and nutritional properties. We use a cold extraction system (temperature below 27°C) that keeps aromas and health benefits intact. The process is completely mechanical, without the use of chemical solvents, guaranteeing extra virgin oil of the highest quality.

Storage

After extraction, the oil is stored in stainless steel containers at controlled temperature, protected from light and oxygen. This allows us to keep the organoleptic characteristics unchanged until bottling. Each batch is analyzed to ensure the highest quality standards before reaching your table.
